Chicken Milanese

Ingredients

12oz – 1/2 Boneless Skinless Chicken Breasts, Split

2 Cups of Italian Bread Crumbs

1/2 Cup of Parmesan Cheese, Merchant Cheese

3 Extra Large Eggs

1 Cup of All Purpose Flour

6 Tbl. of Olive Oil

1 Tbl of Chopped Garlic Cloves

1 Pint of Cherry Tomatoes

2 Dashes of Baby Arugula

1ea of Mozzarella, Pearls Cheese

.8 Tsp. of Black Cracked Peppercorn

3 Fl. oz. of Balsamic Glaze

Directions

Assemble all ingredients.

Split chicken breast in half.

Lightly pound into cutlet.

3 step bread cutlets, flour, eggs, bread crumbs.

Chop garlic.

Saute garlic in 4oz of the Olive Oil.

Saute chicken breasts in the garlic and oil until golden brown.

Blister the tomatoes in the oil and garlic.

Toss the arugula in the remaining olive oil.

Place chicken on plate and top with arugula, tomatoes and fresh mozzarella pearls.

Drizzle balsamic over the top.
